RELATÓRIO DE ESTÁGIO: MANEJO DE ORDENHA E QUALIDADE DO LEITE

Abstract

This work describes the activities developed in the supervised curricular internship that aimed to evaluate the influence of milking management on milk quality in different rural properties, considering equipment hygiene, milk composition, somatic cell count, total bacterial count and incidence of mastitis. During the internship, rural properties with different realities were visited, with some requiring changes in management and training for employees. Others just kept the procedure and implemented tools to achieve better results. All visits were provided with a report at the end, showing what was done and what needed to be changed to resolve each issue. With the growing demand of consumers in relation to the quality of milk and dairy products, the handling of milking and the quality of milk are topics that generate numerous researches. Therefore, all the activities carried out in the internship and the studies to carry out this Course Work, evidenced the influence of milking management on the quality of milk.
