This study aimed to evaluate the effect of including honey as a partial substitute for sugar on cake quality, with different percentages of honey (0%, 5%, 10%, and 15%). Unlike refined sugar, honey is rich in vitamins, minerals, and antioxidants, substances that fight free radicals and help prevent diseases. Although honey has a high sugar content, research indicates that its consumption may moderate post-meal glucose spikes, helping to reduce blood sugar levels in people with type 1 and type 2 diabetes. The study aimed to evaluate the physicochemical, microbiological, and sensory characteristics, submitting the results to analysis of variance (ANOVA) and Tukey's test. Considering the superior nutritional profile and the sensory analysis results, the cake with 15% honey proves to be commercially viable. However, since all treatments had great acceptance and there was no significant statistical difference in acceptance, the cake with 5% honey is recommended because it is more economically affordable. The activities aimed to link theoretical knowledge acquired during the course with real-world field situations, allowing for the monitoring of sow reproductive management, piglet care from birth to weaning, feeding and health management in the nursery, and procedures for animal selection, weighing, and transport. The internship was conducted from April 6 to May 29, 2026, fulfilling the workload required by the Bachelor's Degree in Animal Science at the Federal Institute Goiano – Campos Belos Campus. During the internship period, activities related to customer service, inventory control and verification, shelf and warehouse organization, merchandise inspection, technical field visits to rural properties, administrative routines, billing procedures, data entry into the Goiás Agricultural Defense System (SIDAGO), and participation in technical training sessions were performed. The experience enabled the practical application of knowledge acquired throughout the undergraduate program, especially in the areas of animal nutrition, management, animal health, and agribusiness management. Furthermore, it contributed to the development of professional skills such as communication, organization, responsibility, and teamwork. The internship played an important role in academic and professional development, providing a broader understanding of the operation of agricultural supply companies and the role of the animal scientist within the agribusiness sector.
